BBQ Pita Bread Pizza with Vegetables and Optional Chicken
One of my staple meals.
Ingredients:
- Pita bread (1 per serving)
- Sweet Baby Ray's BBQ Sauce (2 tablespoons per pita)
- Mozzarella cheese (1/2 cup per pita)
- Bell peppers, thinly sliced into rings (1/2 pepper per pita)
- Tomatoes, thinly sliced and then halved (1 small tomato per pita)
- Onions, finely diced (1/4 onion per pita)
- Jalapeño peppers, thinly sliced (1 pepper per pita, adjust to taste)
- Optional vegetables: mushrooms, thinly sliced
- Garlic powder, oregano, parsley, or other herbs (1/2 teaspoon each per pita)
- Optional: chicken (leftovers, rotisserie, or sliced deli, 1/2 cup per pita)
- Olive oil (1 teaspoon for drizzling)
- Feta cheese (2 tablespoons for topping)
Instructions:
- Preheat the Oven: Set the oven to broil to preheat, then switch to bake at 325°F after placing the pita on the middle rack. (350°F if the pita is frozen).
- Prepare the Pita: Spread 2 tablespoons of Sweet Baby Ray's BBQ Sauce evenly over the pita bread.
- Add Cheese: Sprinkle 1/2 cup of mozzarella cheese over the pita.
- Prepare Vegetables: Thinly slice bell peppers into rings, thinly slice and halve tomatoes, finely dice onions, and thinly slice jalapeño peppers. If using mushrooms, thinly slice them as well.
- Add Vegetables: Pile on the prepared vegetables, spreading them evenly over the cheese.
- Season: Sprinkle with 1/2 teaspoon each of garlic powder, oregano, parsley, or other herbs.
- Add Meat (Optional): If using, add 1/2 cup of chicken (leftovers, rotisserie, or deli sliced), avoiding canned chicken for texture reasons.
- Bake: Place on the middle rack of the oven and cook until the toppings are brown around the edges, approximately 10-15 minutes.
- Slice: Cut the pita into fourths using a pizza cutter or sharp knife.
- Add Final Touches: Drizzle with 1 teaspoon of olive oil if desired and top with 2 tablespoons of feta cheese post-cooking.
